COFFEE PROCESSING
Honey processing is a method used in production where ripe coffee cherries are pulped to remove the outer skin, but some or all of the sticky mucilage—the honey-like substance that surrounds the coffee bean—is left intact during drying. This mucilage can vary in amount, leading to designations like white honey, yellow honey, red honey, or black honey. During drying, the mucilage can ferment, imparting unique flavors to the beans, such as sweetness, fruitiness, and sometimes a syrupy body.
